Perfect Mash Prep Time: 10 Minutes Cook Time: 25 Minutes Ingredients Serves: 4 1 kg King Edwards or Maris Piper 150 g + 50 g unsalted butter 150 ml milk sea salt & white pepper Method 1 Wash the potatoes, peel and chop into 8cm pieces. 2 Wash again in cold water, until it runs clear. 3 Add salt to the water and bring to a boil. 4 Simmer the potatoes until the tip of the knife pierces them. 5 Strain the potatoes in a coliander and allow to dry. 6 Meanwhile, bring the milk and butter to a simmer in the pan. 7 Add the potatoes then season with salt and pepper. 8 Mash with the potato masher. 9 Beat quickly to make the mash light and fluffy.
