The answer to making fluffy rice is to reduce the amount of water, and once cooked let the rice stand for 10 minutes covered with a heavy tea towel. This is because Jasmine rice is a lot softer, and more water will make it ‘gummy’ rather than fluffy.
Ingredients

200 g jasmine rice
250 ml water
Method
1 Place the rice in a medium pan filled with water.
2 On a medium/high heat bring to a boil.
3 Cover the pan with a lid.
4 Turn down to a low heat.
5 Cook for 12 minutes.
6 Remove from the heat and cover with a heavy tea towel.
7 Leave for 10 minutes.
8 Fluff the rice with a rubber spatula then serve.
