Ingredients for the Tzatziki 300g Greek yoghurt 1/2 cucumber peeled 2 cloves garlic peeled 1/2 lemon zested and juiced Sea salt & black pepper 2 tbs chopped mint 2 tbs chopped dill Method 1 Strain the yoghurt in a cheese cloth for 20 minutes. 2 Grate the cucumber into a bowl, season well with salt and pepper then mix well. 3 Then drain is a sieve for 10 minutes. 4 Squeeze out all the excess liquid from the cucumber. 5 Finely chop the garlic. 6 Add all the ingredients into a bowl, mix well. 7 Taste and adjust seasoning if needed.
