Tzatziki

Nothing beats the home-made version. I strain Greek yogurt in a cheese cloth to make it extra creamy and use organic cucumbers as they are tastier.
Ingredients for the Tzatziki
- 300g Greek yoghurt
- 1/2 cucumber peeled
- 2 cloves garlic peeled
- 1/2 lemon zested and juiced
- Sea salt & black pepper
- 2 tbs chopped mint
- 2 tbs chopped dill
Method
1 Strain the yoghurt in a cheese cloth for 20 minutes.
2 Grate the cucumber into a bowl, season well with salt and pepper then mix well.
3 Then drain is a sieve for 10 minutes.
4 Squeeze out all the excess liquid from the cucumber.
5 Finely chop the garlic.
6 Add all the ingredients into a bowl, mix well.
7 Taste and adjust seasoning if needed.
