Khobz – Moroccan Flat Bread

This is one of the easiest breads to bake, only requiring one rise. This baked when required in Morocco, for breakfast, lunch and dinner served warm. You may need to adjust the water or add a little flour, depending on the humidity.

Ingredients

  • 500g strong flour / bread flour plus extra if needed
  • 2 tsp salt
  • 1 tsp honey
  • 1 tbsp dried yeast
  • 320 ml water warm
  • 2 tbsp olive oil
  • Fine semolina for dusting

Method

1  Line a baking tray with parchment paper and dust with semolina
2  Dissolve the honey and the yeast in 60 ml of the water, put in a warm place and allow to become frothy for about 10 minutes
3  Add the salt to the flour and stir well
4  Then add the yeast mixture the rest of the water and olive oil
Mix for 7 minutes in an electric mixer or 10 minutes by hand, until it is velvety and soft but not gluey
6  Divide into 2 even balls and place well-spaced apart, cover with a damp cloth
Leave to rest for 10 minutes
8  Then flatten each ball into 1 cm thick rounds, cover with the cloth and allow to rise for 1 hour in a warm place
9  Meanwhile preheat the oven 220c / 200c fan
10  Prick with a fork all over the dough and bake for 20 minutes
11  Allow to cool on a wire rack
