Panna Cotta

This is a quick and easy, classic Italian, light dessert. Great for all to eat. Serve with seasonal fruit. In the Summer, I use local strawberries.

Ingredients

  • 600 ml double cream
  • 100 ml full fat milk
  • 60 g caster sugar
  • 4 leaves of gelatine
  • 1 vanilla pod

Method

1  Pour the milk and cream into a heavy-bottomed saucepan.

2  Cut the vanilla pod in half and scrape the seeds with the back of a knife into the above mix.

3  Bring to a simmer, remove from the heat.

Meanwhile soak the gelatine leaves in cold water until soft. Squeeze out the water and stir into cream mixture.

Pass through a sieve.

6  Pour mixture into 6 ramekins.

7  Allow to set in the fridge for a minimum of 2 hours.

8  Carefully dip the ramekins into a bowl of warm water to loosen the Panna Cotta.

9  Invert the ramekin and with a sharp movement release the Panna Cotta from the ramekin holding underneath until plated.

10  Serve with seasonal fruit.
