Perfect Mash

Ingredients

  • 1 kg King Edwards or Maris Piper
  • 150 g + 50 g unsalted butter
  • 150 ml milk
  • sea salt & white pepper

Method

1  Wash the potatoes, peel and chop into 8cm pieces.
Wash again in cold water, until it runs clear.
Add salt to the water and bring to a boil.
Simmer the potatoes until the tip of the knife pierces them.
Strain the potatoes in a coliander and allow to dry.
Meanwhile, bring the milk and butter to a simmer in the pan.
Add the potatoes then season with salt and pepper.
Mash with the potato masher.
Beat quickly to make the mash light and fluffy.
