The answer to making fluffy rice is to reduce the amount of water, and once cooked let the rice stand for 10 minutes covered with a heavy tea towel. This is because Jasmine rice is a lot softer, and more water will make it ‘gummy’ rather than fluffy.

Ingredients

  • 200 g jasmine rice
  • 250 ml water

Method

Place the rice in a medium pan filled with water.
On a medium/high heat bring to a boil.
Cover the pan with a lid.
Turn down to a low heat.
Cook for 12 minutes.
Remove from the heat and cover with a heavy tea towel.
Leave for 10 minutes.
Fluff the rice with a rubber spatula then serve.
