Panna Cotta

This is a quick, easy and light classic Italian dessert. Serve it with seasonal fruit; in summer, I use local strawberries.
Ingredients
- 600ml double cream
- 100ml full-fat milk
- 100g caster sugar
- 4 leaves of gelatine
- 1 vanilla pod
- 1 punnet strawberries
Method
1 Pour the milk and cream into a heavy-bottomed saucepan.
2 Cut the vanilla pod in half and scrape the seeds with the back of a knife into the milk and cream mixture.
3 Bring to a simmer, remove from the heat.
4 Meanwhile soak the gelatine leaves in cold water until soft. Squeeze out the water and stir into the cream mixture.
5 Pass through a sieve.
6 Pour the mixture into 6 ramekins.
7 Allow to set in the fridge for a minimum of 2 hours.
8 Carefully dip the ramekins into a bowl of warm water to loosen the panna cotta.
9 Invert the ramekin and with a sharp movement release the panna cotta from the ramekin holding underneath until plated.
10 Serve with seasonal fruit.
