At 21, Andy left the UK for the Indian subcontinent. After arriving in Delhi, he traversed the region via steam locomotives and gruelling bus rides.
His journey took him from the Taj Mahal in Agra to the “Pink City” of Jaipur and onto to Nepal. After a visit to the local meat markets, he spent the rest of the trip as a vegetarian.
Three months later, he landed in Australia. When a photography job failed to pay, he became a kitchen porter for the steady wages and free meals.
While working alongside highly skilled Indian chefs, he quickly developed a deep knowledge of their cuisine.
