The Hout Bay Ostrich Escape

Rich, aromatic and packed with warming spices, bobotie is the ultimate autumn and winter comfort food. This traditional South African dish combines beautifully spiced minced beef, fruity chutney and a hint of citrus, all finished with a golden, savoury egg custard topping.

I first discovered bobotie while working on a consultancy for Stanley Dorman at Fisherman’s Wharf in Hout Bay, South Africa.

Getting there was an adventure in itself. A bank error over a long weekend left my Pretoria-born girlfriend and me without a rental car, forcing us to embark on an epic bus journey from Pretoria, through Johannesburg, all the way to Cape Town.

The following day, a much-needed walk took an unexpected turn when we found ourselves being chased by a rogue ostrich! Cue a frantic sprint and a desperate leap over a fence to escape.

Thankfully, we lived to tell the tale, and later laughed about our narrow escape over plates of this incredible Cape Malay dish.

My version uses Madras curry powder for an extra punch of warmth and spice, but a milder curry blend works just as beautifully if you prefer something a little gentler.

The result is a wonderfully comforting dish that’s sweet, savoury, fragrant and satisfyingly zingy.

Ingredients

  • 750g minced beef
  • 3 slices of slightly stale white bread
  • 375ml milk, divided (250ml + 125ml)
  • 3 eggs
  • 2 tbsp vegetable oil
  • 2 large onions, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 2 tbsp Madras curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp dried oregano
  • 150g Mrs Ball’s chutney
  • 2 tbsp tomato purée
  • 1 lemon, zest and juice
  • 2 bay leaves
  • Sea salt and freshly ground black pepper, to taste

Method

  • Place the bread in a bowl and pour over 250ml of the milk. Leave to soak for a few minutes until softened. Squeeze the excess milk from the bread, reserving the liquid. Set the softened bread aside.
  • In a separate bowl, whisk together the eggs, the remaining 125ml of milk and the reserved soaking milk until well combined. Set aside.
  • Heat the vegetable oil in a large, heavy-bottomed, ovenproof frying pan over a low to medium heat. Add the chopped onions and cook gently for 8–10 minutes, stirring occasionally, until softened and translucent.
  • Stir in the chopped garlic and cook for a further 2 minutes, taking care not to let it burn. Add the Madras curry powder, ground cumin, turmeric and oregano. Stir well and cook briefly to release the aromas of the spices.
  • Add the minced beef to the pan, breaking it up with a wooden spoon as it cooks. Continue cooking until the meat is evenly browned and any large clumps have been broken down.
  • Stir in the Mrs Ball’s chutney, tomato purée, lemon zest and lemon juice. Season generously with sea salt and freshly ground black pepper. Add the softened bread and stir thoroughly until everything is well combined. Cook for another 2–3 minutes to allow the flavours to develop.
  • Preheat the oven to 180°C (160°C fan). Spread the meat mixture evenly across the ovenproof pan, or transfer it to a suitable baking dish.
  • Gently pour the prepared egg and milk mixture over the meat, ensuring an even covering. Place the two bay leaves on top.
  • Transfer to the preheated oven and bake for approximately 40–45 minutes, or until the custard topping is set and beautifully golden brown.
  • Remove from the oven and allow to rest for 5 minutes before serving. Enjoy with fluffy yellow rice, a generous spoonful of Mrs Ball’s chutney and a simple fresh salad.
