This is French country cooking at its finest: a real autumn or winter dish, served with mash and glazed carrots or greens. Whichever good-quality wine you use to marinate the beef overnight, serve the same wine with the dish the next day. I make this with beef shin; alternatively, use chuck steak and allow an extra 45 minutes’ cooking time.

I learnt to cook risotto while doing a stage in Milan during a very cold January. This version works well with spring vegetables as a vegetarian dish. Made simply with saffron, it can also be served with osso buco.

There are many stories about the origins and ingredients of carbonara, from American GIs calling it a ‘spaghetti breakfast’ to its association with charcoal makers. The best version I came across was while working with a Sardinian chef called Martin. It is very simple, with no cream. Take care with the salt, as the guanciale and pecorino are already quite salty. I also add basil to the cheese and egg mixture.
